秋天是豐收的季節,用椰子,南瓜,薑糖,杏脯做蛋糕,豐富,秋意濃濃。
這個蛋糕簡單易做,還相當健康,令人驚訝的香脆。:) 秘訣在於,用薑糖+磨碎的烤亞麻籽代替白糖+薑蓉+玉米油。
薑糖--ginger syrup: 4 cups sugar 2 cups fresh ginger, cut into 1/8-inch slices (about 2 large hands) 2 cups water In a medium saucepan over high heat, combine sugar, ginger, and water and bring to a boil. Reduce heat and simmer until syrupy and reduced by half, about 40 to 45 minutes. Strain ginger pieces out and reserve syrup.
蛋糕: 3 杯全麥粉 2 小匙baking powder 1 小匙 baking soda 1 大匙 肉桂粉 1.5杯薑糖 1 3/4 小匙 ground allspice 1 小匙鹽 1/2 小匙 ground nutmeg 1 杯磨碎的烤亞麻籽 4 個雞蛋 1 磅南瓜泥 1 大匙香草精華 3/4 杯切碎的杏脯 3/4 杯椰絲 少許橙皮屑 先把薑糖和亞麻籽用攪拌器打成濃糊,把雞蛋一個一個加進去,一邊加一邊打勻。最後把所有幹料(除了椰絲,杏脯和橙皮屑),拌進去,拌勻,再加入椰絲和杏脯,橙皮屑。最後,350度烤20分鍾即可。
