葡式蛋撻 Portuguese Egg Tart


餡料:

2 TB 玉米澱粉, cornstarch
2 c Half & Half
6 TB 糖, sugar
¼ tsp鹽, salt
6 個蛋黃, egg yolks
1 段桂皮, cinnamon stick
1個 檸檬皮, lemon peel,
1支香草豆角, 破開, 用刀刮下籽,

皮:

一包frozen butter puff pastry, thawed.

做法:

把餡料倒入厚鍋裏, 攪拌勻, 慢火加熱, 到濃稠, 過篩, 保鮮膜蓋好, 冷卻,
皮子卷成筒, 切小段, 杆成圓形, 墊在撻模裏, 加入餡料, ¾ 滿.

進375F烤箱, 烤12-15分鍾, 再用broiler 烤3-5分鍾, 表麵金黃, 略有焦灼就好了.
