薺菜腐皮卷,
冰凍薺菜覺得不錯, 再來做個上海菜, 也很成功,跟大家分享一下,
冰凍的薺菜解凍衝淨, 擠幹, 打碎, 備用.
薺菜泥拌入鹽, 糖, 雞粉, 麻油, 鋪一層在腐皮上, 卷起, 蒸20分鍾, 趁熱, 刷點醬油和麻油, 保鮮膜包好進冰箱冷卻後,切片裝盤.

腐皮卷肉,
肉末拌入酒,白胡椒, 香油,生粉,糖, 鹽, 蔥末, 薑汁, 攪拌上勁, 鋪一層在腐皮上, 卷起, 用水和一點醬油, 燜燒20分鍾, 燒幹了汁, 再開蓋加點油, 兩麵煎金黃, 取出,冷卻後, 切塊裝盤.
用鹵汁鹵了一些野蕨菜, 一起並盤.
