上兩個小吃 - 越南肉餅(Vietnamese Pate), 酒煮淡菜(Mussels steamed in wine)


越南肉餅, Vietnamese Pate

材料:

2LB豬肉糜
1 TB 太白粉,
1 tsp 蘇打粉, baking soda
½ tsp 月桂粉, cinnamon
¼ c 魚露,
1TB 糖,
1 tsp 鹽,
½ tsp胡椒粉,

把所有的材料拌勻, 放入一個墊有保鮮膜長方型的容器, 保鮮膜兩麵留5-6寸, 壓平肉泥, 保鮮膜兩麵對蓋過來包好, 進冰箱過夜, 第二天, 再用錫紙包好進 350F烤箱,烤1小時, 冷卻後切片夾法國麵包和甜酸紅白蘿卜, 薄荷葉, 香菜吃, 很好吃.

酒煮淡菜, Mussels steamed in wine

材料:

3LB淡菜
4TB奶油,
1/4洋蔥,
4-5蒜,
1TB百裏香, thyme
1 杯白酒,

小香蔥, chives

用奶油炒香, 洋蔥, 蒜, 百裏香, 到入淡菜和酒蓋蓋, 大火燒4-5分鍾, 淡菜開口就好了, (不要煮久了, 煮老了就縮小了, 又老又硬, 不好吃). 撒香蔥, 湯汁用來沾法國麵包吃.
