看過紅帽的”培養正氣的汽鍋雞”, 馬上就訂購了這個汽鍋, 汽鍋來啦,

立即就去買了隻走地雞來做這道有名的雲南汽鍋雞 , 用了上次中藥鋪裏買的藥材來蒸, 雞切塊, 去掉雞的肥油和一些皮, 加了一點酒, 鹽, 沒加水, 蒸了2小時, 撇掉油, 就可享用了.

藥材: 黑棗, 桂圓肉, 苟芑, 黨篸, 當歸, 北芪, 人篸, 甘草,

湯汁真鮮, 可惜太少了, 沒吃過癮, 又買了一隻韓國店的煲湯雞再做, 這次 用了香菇, 幹貝, 苟杞, 薑, 蔥, 鹽, 酒, 白胡椒, 加了水剛淹著雞肉, 同樣是鮮掉了眉毛, 而且雞肉也很嫩滑.


體會: 覺得加點水, 雞肉浸在湯裏, 雞肉很嫩, 湯也更多,更鮮.
