泰式蝦炒粉 - Pad Thai

泰式蝦炒粉-


綜合調料:

拌勻一下:
¼ C 魚露,
2 TB 泰甜醬油,
1 TB 酸子泡5 TB 熱水, 取汁,
2 TB椰糖,碾碎,

香料: 紅洋蔥, (最好是紅蔥頭), 切碎, 蒜切碎, 青蔥切段, 辣椒粉,


材料:

河粉泡溫水,瀝幹,
綠豆芽, 取掉一點根,我這次買的不好, 不壯,
碎肉, 拌酒,鹽, 白胡椒,太白粉,
蝦, 鹽水泡過, 擦幹水,
雞蛋兩個打散,


點綴料: 碎熟花生, 黃瓜, 香菜, 西紅柿.

沾醬: 辣椒切碎, 醋, 魚露 – 出門前家裏的辣椒要處理掉就把它們切碎用魚露和醋泡上, 回家後就想起做這道麵了. 用檸檬汁更香, 但放醋經放. 吃時再加青檸檬汁也行.

做法:

熱鍋下油炒香, 紅洋蔥, 蒜,
加肉末炒熟,
加蝦炒變色,
加蛋炒成型,
加河粉炒幹,
加辣椒粉炒勻,
加綜合調料炒勻,
加青蔥, 豆芽, 拌炒, 裝盤, 撒點綴料,
吃時加沾醬,擠青檸檬汁.
