烤雞晚餐:
用花椒, 和 Moroccan rub (Coriander seeds, chili pepper, black pepper, coarse sea salt), 炒過, 碾碎, 裏裏外外抹在雞上, 進Ziploc bag, 冰箱裏過夜.

第二天取出, 洗淨, 擦幹, 再裏外撒上黑胡椒, 鹽, 擠上檸檬汁, 肚裏塞進切半的檸檬, rosemary, sage, 綁好腿, 胸脯朝上, 放烤盤, 烤盤底裏倒入半瓶啤酒, 進375F烤箱, 放在最低層烤架上, 烤1.0 小時, 中間, 用另一半啤酒混一點桔子水(罐頭裏的), 去刷雞表麵,烤盤裏再加一點水,保持底部不幹.

取出雞後, 讓它醒15分種, 再切開.
烤盤裏剩的汁, 放在爐上, 加用剩的啤酒, 桔子汁燒開勾欠, 作gravy.
配搭菜:
紅薯, 土豆, 胡蘿卜, 切小塊, 拌橄欖油, 鹽, 胡椒, 撒rosemary, sage, 進425F 烤箱烤25-30分鍾.

生菜, 罐頭桔子, 炒鬆子, dry cranberry, parmesan cheese,

Salad dressing: lemon juice, olive oil and some juice from the can of orange, salt & pepper.
