稍微發芽的豆子營養價值最高,和菠菜一起做成這道菜,是個很不錯的素菜選擇!
材料:
1 杯 綠豆 (泡水一天一夜至稍微發芽的狀態,間中換兩次水)
1 把 菠菜 (洗淨切碎)
1/2 隻 洋蔥 (切碎)
1 茶匙 薑蒜蓉
1/8 tsp 芥菜籽 (Mustard Seeds)
1/4 tsp 孜然 (Cumin Seeds)
2 tbsp Butter
調味:
1/4 tsp 薑黃粉 (Turmeric Powder)
1 tsp 辣椒粉 (Chili Powder)
1 tsp 芫荽粉 (Coriander Powder)
鹽適量

1. 先把綠豆加一點薑黃/黃薑粉和一半的辣椒粉和鹽加水在高壓鍋煮大約5-8分鍾或者汽笛響兩次之後自然出氣備用。
2. 豆子煮好之後,在另外一口鍋裏,加上兩大匙油,把孜然,芥菜籽和洋蔥下鍋炒香,加入辣椒粉,黃薑粉和芫荽粉炒香,然後把切好的菠菜倒入翻炒。
3. 倒入煮好的綠豆,加蓋燜煮10分鍾至喜歡的濃稠度,再加點鹽調味就好了。
吃的時候加上一小塊Butter,很香的喔!
